One odd(er?) thing I noticed was the shares for the portal applications were missing from C:\Program Files\SharePoint Portal Server\DATA\Applications\ Catalog1 but the return message was no Catalog1 found (I tried 0-5 just for the heck of it). I've rebooted the server a couple of times, but no luck. If necessary, delete and recreate the content index. If the problem persists, review other errors in the event log.

I figured I did something wrong, so I removed the index & job roles and gave them back to the original server.

I got the new server attached to the farm, but when I trnasferred the index & job roles to the new server, I saw a message in /portal site/site settings/configure search and indexing that said sps-si (new server's name) could not be reached. Yesterday I tried adding a new index/job server to my 2-server farm (one SPS server with all roles & one SQL 2000 server).
